  • 1 Pack of frying
  • 1 teaspoon ground cumin
  • 1 Garlic head
  • 1 White onion, cut into pieces
  • 1 Small paiteña onion or a shallote, cut into pieces
  • Orange juice
  • Salt and pepper to taste
  • 2 Fried ripe bananas
  • 8 Chola potatoes
  • Cooked mote
  • Onion and tomato tanning
  • Avocado
  • Cooked choclo
  • Toasted


  1. Cook the washed potatoes peeled and cut into halves in a pot of boiling water with salt for 8 to 10 minutes.
  2. Place a splash of oil on the satin, sauté the garlic and onion, add the fried add salt, pepper and cumin and sauté for 3 to 5 minutes.
  3. Drain the potatoes and sauté them in the same satin that is endowed with the frying, until this crisps place parsley.
  4. Fry the mature ones.
  5. To pickle cut the onion into juliennes and diced tomato, add lemon, olive oil, salt and coriander.
  6. Fry the mature ones.
  7. Heat the pre-cooked mote and choclo in a saucepan with water and add salt if necessary.
  8. Serve to place a bed of mote, choclo, potatoes, fried, ripe, toasted and pickled, accompany with a slice of avocado and chili.
